在第一、二篇中，分别详细介绍了影响刀具锋利性和保持性的各种因素及其成因，并据此提出了提高锋利性和保持性的技术措施，第三篇则剔除前两篇的理论分析，保留其操作方法，并进行合并总结，以方便阅读。
本文拟讨论与刀具密切相关的磨刀器具的相关理论和技术，主要包括油石等磨料和磨刀器，将从理论分析入手，结合部分实例，发掘影响其性能的主要因素，在此基础上提出磨刀器具的选择、调试和使用的相关建议，仅供刀友选择、使用和DIY时参考。
文中内容仅代表个人愚见，疏漏和错误之处在所难免，敬请见谅并斧正。

一、常见疑问

价格不菲的油石，即使手法稳定，角度正确，刃磨效果也不一定好，应该怎样正确选择并使用油石？
为什么绝大多数磨刀器都达不到标称的理想效果，其原因是什么，怎样调整或改进？
有没有操作相当简单，效果特别好，又经济实惠的磨刀工具？
“吹毛断发”能否实现，这样的锋利度有没有实际价值？

二、刃磨角度的控制

刃磨角度是磨刀技术中最重要，也是最难掌握和控制的因素，在同样磨料、力度和操作方式下，其稳定性对刃磨效果具有决定性作用。众所周知，手不稳、工具设计制造不良以及油石凹陷等都会引起刃磨角度的变化，并最终导致刃磨效果变差，但对其具体过程和影响程度则知之甚少，甚至常常忽略。
由于刀刃与油石直接接触的范围很窄，所以刃磨过程中的角度变化，几乎无法直接测量。本文通过CAD绘图模拟刃磨过程，测绘相应的数据，并结合部分实例，以便找出刃磨角度的变化规律。虽然模拟是在设定的理想情况下进行的，但实践证明其与实际情况相当接近，因此仍具有一定参考价值。

1．油石与刃磨角度
油石表面不平整或凹陷，会将刃口磨圆，刃磨的刀具锋利性低，也不耐用。然而，油石的凹陷却无法避免，怎样减弱其对刃磨角度的影响，以及凹陷到什么程度就应该对油石进行修复？敬请关注以下分析。
为便于分析油石凹陷对实际刃磨角度的影响，假定在刃磨过程中，刀具与油石平整表面之间的夹角始终保持不变，并将其定义为设定刃磨角度，作为预期角度，其数值上等于油石未凹陷之前的刃磨角度。

（1）手工刃磨中油石凹陷对刃磨角度的影响
模拟的刀身厚度2.5mm，采用拖刃磨法，方向自A向C，设定刃磨角度15度（假设刀具不摆动，不摇晃），假定凹陷的形状为圆弧，凹陷长度AC=60mm，深度1.27mm，模拟测试的刃磨角度如下图所示

刀刃在起始位置A，凹陷底部B和终止位置C，实际刃磨角度分别为19.9度，15度和10.9度，呈从大到小变化，在B处与设定值相符。A和C处的刃磨角度都大大偏离设定值，可见油石凹陷对刃磨角度的影响很大。

（2）定角磨刀器的油石凹陷对刃磨角度的影响
使用仿形定角磨刀器进行模拟，刀身厚度3mm，采用拖刃磨法，方向自A向C，设定刃磨角度20度，为便于分析，暂忽略磨刀器其他部件弹性变形，凹陷深度为0.5mm。
现分两种情况讨论，第一种情况，油石得到最大限度利用，即凹陷长度AC=油石长度=150mm，假定凹陷为圆弧形，模拟测试的刃磨角度如下图所示

刀刃在起始位置A，凹陷底部B和终止位置C，实际刃磨角度分别为20.73度，20.16度和19.23度，呈从大到小变化，在B处与设定值最接近。A和C处的刃磨角度都偏离设定值约0.7度，在150mm长度上仅仅凹陷0.5mm，在刃磨角度上带来的误差即达0.7度。
第二种情况，油石仅利用了中间部分，凹陷AC长度为75mm，凹陷的形状为椭圆弧形，底部相对较平坦，两端较陡峭，模拟测试的刃磨角度如下图所示

刀刃在起始位置A，凹陷底部B和终止位置C，实际刃磨角度分别为25.23度，19.64度和14.92度，呈从大到小变化，在B处与设定值最接近。A和C处的刃磨角度都偏离设定值略超过5度，在75mm长度上凹陷0.5mm，在刃磨角度上带来的误差竟高达5度。
